Burnt Orange Ice Cream


Wow this is an interesting recipe! The burnt part is a caramel made of orange juice and sugar. Tim at Lottie + Doof says this is one of best ice creams he has made and that is saying something. It uses an egg custard base which seems fitting for the caramel. There is no reason why you couldn’t try it with an egg-less base or make a vegan burnt orange frozen yogurt if so inclined. It would also be tempting to add a little Grand Marnier, but enough, first try it as Tim intended.

Primary Ingredients/Quantity:
Oranges / 1 quart

Mix Prep Time: 30 min
Freeze Time: 30 min
Total Time: 1 hour

  1. how would this recipe be convertible to both the condensed milk based & jenni bauer britton’s
    iceream base? as far as adapting it for jenni’s base since the carmelized orange juice is already sweet would I still need to add additional granulated sugar to the base if yes then what would be the minimum amt or would the carmel be suffiecient to maintain the right icecream consistency?
    and again would I need an icecream maker to churn it?

    • You would have to experiment. Unless you like very sweet ice cream, I wouldn’t use more than half a cup of sweetened condensed milk. Try replacing 1/2 a cup of the milk with it. If you did this with the Jeni recipe I would I try using only 1/4 cup of sugar.
